A journey that begins at the enchanting Gesha Estates in Panama, culminating in the extraordinary Gesha Criolic coffee – a true masterpiece that reflects the essence of Ninety Plus’ commitment to excellence. Located in the heart of Panama, Gesha Estates is not just a farm; it is a sanctuary where coffee cultivation transcends tradition. Here, the painstaking process begins with the careful selection of freshly picked coffee cherries, kept at low temperatures using water or other means. The Criolic™ processing method, a hallmark of Ninety Plus, takes center stage, exposing the cherries to low temperatures in a controlled oxygen environment.


About the coffee

As coffee cherries undergo Criolic™ processing, oxygen levels play a crucial role in shaping the unique flavor profile of the resulting coffee. The cherries then move gracefully to the drying stage, carefully placed on raised African beds in the renowned Red Room. Over the course of 20-25 days, with regular shaking to ensure even drying, the parchment coffee reaches its optimum moisture of 11.5%, marking the culmination of a painstaking journey. What emerges from this process is Gesha Criolic™ coffee – a true testament to Ninety Plus’ expertise and innovation. This coffee, born from the legendary lot #227 of the 2017 harvest, took the coffee world by storm, winning the Budapest World Brewers Cup 2017.
