The farm/farmer

Finca Pampojila is located south of the village of San Lucas Toliman on the southside of the stunning Lake Atitlan. The farm was established back in 1850 and since 2012 owned by Alex Herrera (Agropecuaria Atitlan SA). Almost half of the finca is used to grow coffee and the other half is wild forest.

 

About the coffee

Guatemala Finca La Pampojila is a coffee from the Atitlan region, Guatemala, grown at 1600 meters altitude. The berries of the Ruiru 11 variety are processed by the Anaerobic Honey method (explained below). The flavors of this coffee include white grapes, yellow plums, dried fruit and pure cocoa.

The anaerobic process involves fermenting coffee beans in an oxygen-free environment, and the honey method involves leaving some of the fruit’s mucilage (a sticky, sugar-rich substance) on the coffee beans during drying.
