The farm/farmer

At 32, Luis Carlos Gutierrez takes on a dual role, taking care of his two daughters and overseeing operations at the farm “El Mirador” in Garzon Huila. Although not the owner of the farm, he is responsible for maximizing the potential of coffee varieties such as Columbia, Caturra, Pink Bourbon and Castillo.

Despite not being the largest, El Mirador boasts 12 hectares of coffee and 6 hectares of native forest, serving as the origin of the village’s water reservoir – figures that exceed the national average. Collaborating with his brother, they manage the traditional processes known as “los pergaminos secos”, each contributing their specialized skills.

 

About the coffee

Through the experimental processing of the Pink Bourbon variety, valuable information was obtained, which led to the refinement of a natural process after many trials. Drawing on his experience as a quality analyst for a local coffee company, Luis Carlos has transformed his farm into a laboratory equipped with the necessary tools to create a robust yet balanced coffee profile. Bourbon, known for its delicate and floral notes, served as the canvas for his experiments, which contributed enormously to the present results.

 

Although the quantities may be modest compared to overall coffee production, the results point to a promising and more stable future in specialty coffee. Driven by motivation, they continue to create coffee that delights consumers around the world.
